Tasty Homemade Foxtail Millet Pongal
- Foxtail Millet Rava – 1 cup
- Moong dhal/ paasi paruppu – ½ cup
- Salt – as needed or 1 tsp.
- Turmeric powder – ¼ tsp.
- Ginger – 1 inch piece
- Oil or ghee – 3 tsps.
- Black pepper – 1 tsp.
- Jeera / cumin seeds – 1 tsp.
- Curry leaves – a handful
- Cashew nuts – 10 optional
- In a skillet, heat 1 teaspoon of ghee and toast the cashew nuts until golden. Set them aside.
- Using the same skillet, roast the foxtail millet rava in low flame until it takes on a golden hue, then set it aside.
- In the meantime, pressure cook the moong dal for 2 whistles until it's tender.
- In another pan, warm up oil or ghee and add cumin and pepper. After about half a minute, introduce curry leaves.
- Pour in 2 ½ cups of water, add salt, turmeric powder, and the cooked moong dal. Mix well.
- Once it starts boiling, incorporate the roasted millet rava and vigorously stir to avoid lumps.
- As it thickens, cover with a lid and let it simmer for 5 minutes.
