Parangikkai Porial / Yellow Pumpkin Curry
We use yellow pumpkin to make different items like kuzhambu, kootu, etc. Yellow pumpkin is called as parangikkai, arasanikkai or manjal poosanikkai in tamil. This curry is simple to make and tastes good.

Ingredients
- Yellow Pumpkin or Parangikkai – 2 cups peeled and chopped into large cubes
- Turmeric Powder – ¼ tsp.
- Salt – as needed
- Coconut Oil – 1 tbsp.
For Grinding:
- Grated Coconut – ¼ cup
- Cumin Seeds – ½ tsp.
- Small Onions – 4
- Red Chillies – 2 or 3
For Seasoning:
- Mustard Seeds – ½ tsp.
- Ured Dhal – ½ tsp.
- Curry Leaves – a handful
Instructions
- Grind Coconut, red chillies, small onions and cumin seeds to a coarse paste by adding little water.
- In a pan, heat oil and add mustard seeds.
- When it spluttres add ured dhal and curry leaves and fry forhalf a minute.
- Now add pumpkin cubes and fry for a minute in low flame.
- Add turmeric powder, salt, ground coconut paste and little water and close with a lid. Cook till pumpkin becomes soft and cooked well.
- Turn once in a while.
- Switch off the flame and serve hot.
