Ingi Rasam / Ginger Rasam

Ingredients
- Tamarind – small lemon sized
- Turmeric Powder – ¼ tsp.
- Salt – 1 tsp. or as needed
For Grinding:
- Ghee – 1 tsp.
- Toamto – 1 chopped finely
- Ginger – 3 tbsp. peeled and chopped finely
- Toor Dhal – 1 tsp.
- Gram Dhal – 1 tsp.
- Black Pepper – 1 tsp.
- Red Chillies – 3
- Cumin Seeds – ½ tsp.
- Curry leaves – a handful
For Seasoning:
- Ghee – 1 tsp.
- Mustard Seeds – 1 tsp.
Instructions
- Soak tamarind in 1 cup of hot water and extract tamarind juice.
- In a pan heat ghee and add the ingredients given for grinding except tomato and roast in medium flame till the dhals turn golden in colour.
- Switch off the flame and let it cool down.
- Add tomato and grind to a coarse paste.
- In a thick deep vessel, add ghee and heat.
- Add mustard seeds and when it splutters, add the tamarind extract, ground paste and salt and boil.
- When it starts to boil, switch off the flame.
- Serve hot with rice.
