Brinjals are a very rich source of fibre and low soluble carbohydrates. So they are useful for regulation of blood sugar levels and also to control the absorption of glucose. There is high level of iron in brinjal which is beneficial for women. This recipe uses masala powder made using red chillies, dhania and gram dhal. Those who do not like brinjal also will like this one.
Ingredients: |

Brinjal | – ¼ Kg. (cut into 1 inch long pieces) |
Salt | – as needed |
Oil | – 1 tsp. |
Mustard | – 1 tsp. |
Ured dhal | – 1 tsp. |
For Masala Powder: |
|
Oil | – 1 tsp. |
Red chillies | – 5 (broken) |
Dhania (coriander seeds) | – 2 tsps. |
Gram dhal | – 2 tsps. |
Method:
- In a pan fry the ingredients for the masala powder till golden brown.
- When it cools, grind it to a fine powder in a mixie.
- In another pan splutter mustard and ured dhal in oil.
- Put the brinjal and add salt and add one cup of water and cook closed till it cooks well without any water.
- Now add the ground masala and mix well and switch off the stove.
- Brinjal masala curry is ready to serve.
