Rava Kesari, also known as Sooji Halwa, is a popular Indian dessert that is made with semolina, sugar, ghee, and water. It is a simple and easy-to-make dessert that can be prepared in just a few minutes. Rava Kesari is usually served as a dessert during festivals and special occasions, and it is loved by people of all ages.
The ingredients used to make Rava Kesari are readily available in most Indian households, which makes it a go-to dessert recipe for many. Semolina or Rava is a coarse flour made from durum wheat, and it is a popular ingredient in many Indian sweet and savoury dishes. Ghee is a clarified butter that is commonly used in Indian cooking, and it gives Rava Kesari its rich and buttery flavour. Sugar and water are added to the mixture to make a sweet syrup that binds the semolina and ghee together.
To make Rava Kesari, start by roasting the semolina in a pan until it turns light brown and releases a nutty aroma. Next, heat some ghee in the same pan and add the roasted semolina to it. Stir the mixture continuously to ensure that the semolina is coated with ghee evenly. After a few minutes, add the sugar and water to the pan and mix well. Stir the mixture continuously until the sugar dissolves completely and the water is absorbed by the semolina. You can also add some food colouring or saffron to the mixture to give it a beautiful yellow or orange hue.
Once the water is absorbed, cover the pan with a lid and let it cook for a few minutes. This will help the semolina absorb all the flavours and become soft and fluffy. You can also add some chopped nuts and raisins to the mixture to give it a crunchy texture. Once the Rava Kesari is cooked, turn off the heat and let it cool for a few minutes. You can serve it warm or cold, garnished with some chopped nuts and a drizzle of ghee.
Rava Kesari is a delicious and comforting dessert that is loved by people all over India. It is a simple and easy-to-make recipe that can be modified according to your taste preferences. You can add more sugar if you have a sweet tooth, or reduce the amount of ghee if you are watching your calorie intake. You can also experiment with different flavours and ingredients to create your own unique version of Rava Kesari. So, the next time you are craving something sweet, try making Rava Kesari at home and enjoy this delectable dessert with your loved ones!
