Another great recipe for Navratri by Chef Rajender Bhandari, Corporate Chef, SRS 7 Dayz. With baked potatoes and pomogranate, this recipe looks awesome.
|Baked Potatoes||200 gm|
|Refined Oil||150 ml|
|Ginger Chopped||05 gm|
|Mint finely chopped||10 gm|
|Green Chilly||05 gm|
|Green Coriander||10 gm|
|Lemon Juice||15 ml.|
|Rock Salt||07 gm|
|Cucumber cubes||10 gm.|
|Lemon wedge||01 no.|
Peel the baked potatoes and cut it into medium cubes.
Heat oil in medium heat in a pan or Tawa, and add peeled potatoes cubes in slow heat till it becomes golden brown. Ensure that the heat should be slow otherwise potatoes won’t be crispy.
Break green chillies into small pieces in a bowl and add potatoes, chopped ginger, mint leaves, chopped half of the coriander leaves and toss well.
Sprinkle rock salt, lemon juice and toss again.
Place on a serving bowl topped with pomegranate seed, cucumber cubes and lemon wedge and serve as per given picture or as per your choice
